Luxury, clarity, and ritual - reimagined without alcohol.
As the founder of IYLIA, I set out to create a luxury non-alcoholic sparkling wine crafted in Spain - an alcohol-free alternative that still honors the ritual, refinement, and pleasure of fine wine. Without compromise.
I didn’t want a substitute. I wanted an experience.
Honestly, this all came about during the pandemic. As I was pivoting out of footwear and accessories, I found myself in Spain, quietly asking a bigger question: If I were to step into the beverage space, what would that look like? Around that time, I began noticing a few non-alcoholic bottles appearing on supermarket shelves across Europe - not from Spain, but from other countries. Curious, I brought several home.
I was completely Underwhelmed.
Everything tasted flat. Disconnected. There was no extension of the original wine experience - no soul, no structure, no pleasure. And that’s when the real thinking began. If I were going to do this - and I could already see that non-alcoholic wine was going to become a meaningful trend - what would I want it to taste like? How would I want it to feel? What kind of experience would I want to have if I were choosing a non-alcoholic beverage?
I knew it had to have dimension.
I knew it had to have texture.
I knew the nose had to be elegant - expressive, layered, inviting.
It needed to be robust, but not overwhelming.
Delightful, but never saccharine sweet.
It couldn’t be sugar water with bubbles. That was non-negotiable.
And so, very intentionally, I began building what would become IYLIA.
Crafted in Spain using traditional winemaking techniques and a gentle dealcoholization process, our sparkling wines preserve the integrity, aroma, and structure you expect from fine wine - without the alcohol. Every detail matters: the balance on the palate, the clarity of flavor, the elegance of the bubbles, the way the wine evolves in the glass.
Because ritual matters.
Because presence matters.
Because celebration should never feel like a compromise.
This journey has taken six years. Six years of refinement, patience, learning, and trusting my instincts. To finally see how people are responding - to watch them taste IYLIA and understand what we were aiming for - has been incredibly rewarding. It is, without question, a labor of love.
So much so that I’ve consciously stepped back from much of the alcoholic beverage work we were producing to focus deeply on this non-alcoholic space. It’s growing - rapidly. And more importantly, it’s evolving. People want clarity. They want intention. They want beauty without excess.
IYLIA is my offering to this new era of celebration - one where refinement and clarity coexist, where indulgence doesn’t require alcohol, and where every pour reflects care, craftsmanship, and purpose.
